Every venue running a by-the-glass or tasting program faces the difficulty of opened wines that should be served at their best but wind up sitting several days between servings. As a wine store and tasting bar owner myself, I recognized the need for this quality wine preservation first hand.  We started with vacuum pumps and canned products but pumps proved less reliable than we liked and the blend of gases   in the cans was  questionable as to its effectiveness.  After months of research and several incarnations, what started as a pet project to fill the need in our wine shop, has turned into VinAssure™ Wine Preservation Systems.  Using the finest quality industrial parts, we set out to handcraft a lightweight hand-held device that would hold large volumes of winery-grade argon gas under high pressure.  This allows you to inject more or less Argon, depending on your needs, at maximum value and preservation level. 


Our winery-grade ALIGAL™ Argon (from multi-national Air Liquide) purges the air in the empty bottle space so that what comes in contact with the wine is mostly Argon. The Argon, along with refrigeration, protects the wine from oxidation. It is a misconception that Argon forms a layer on top of the wine to protect it from the air.  Scientists have confirmed that Argon is heavier 'enough' than air for it to fall beneath the air briefly, thus purging the air from the space in the bottle. If you injected enough Argon to fill 100% of the empty space, that space would be 100% Argon. But........ if you inject just enough Argon to preserve the wine (as we suggest), what happens is that the Argon quickly mixes with the air remaining in the empty space and creates an 'Argon-rich' atmosphere.  Except for the most discriminating palate, that's enough to preserve the aroma and taste of the wine.  VinAssure™ protects the quality of wine seven days or more, depending on the wine, storage temperature, and taster's palate.
